The first thing that we do when we are cleaning hoods and kitchen equipment is to first clean the grease traps Then we change and remove the filters. Finally, once the filters are cleaned and drying, we take the opportunity to clean and degrease the inside and out of the kitchen hood itself.
Step 1. Remove the grease trap. Typically on each side of the hood are two small grease traps. These should be cleaned pretty often, just in case, we do that first of all.
Step 2. Remove the grease and place it in a separate container. We never dump any grease down the drain. Or into the trash. We always keep the grease that we clean in a special container to be taken away and disposed of through the proper channels. usually using an oil recycling company
Step 3. Degrease. Once we have removed the grease from the trap and put it into a separate grease catch, we then get to work preparing our de-greasers and water for the deep clean.
Step 4. Soak the Traps. The grease traps are then soaked in the water and degreasing solution for at least five minutes
Step 5. Dry the Grease Traps. Once the grease traps have been soaked in our solution they are ready to be taken out and dried.
